Ingredients:
One large or two regular size pound cake's, day old or stale works great.
One large box of vanilla pudding One large box of chocolate pudding.
Method:
Slice pound cake and line the bottom of a 9 by 13 cake pan.
Make pudding according to box, pour vanilla over sliced cake, put another layer of cake over top of vanilla pudding

Recipe name: Macaroni & Cheese
Ingredients:
1 lb. of macaroni
3/4 lb. of sharp cheese, I use a lb.
2 cups of sour cream
1 cup of cottage cheese
1 egg
3 Tabls. of butter melted
Method:
Cook macaroni.
While it is cooking, mix cottage cheese and sour cream with egg. Rinse macaroni after it is done.
Put in chunks of shap cheese. Mix all the other cheeses with egg into the macaroni.
Put into a greased 2 qt. casserole. Pour metled butter over the macaroni mixture. Spread bread crumbs or crumbled cheese cracker on top.
Bake at 350 for 45 mins. uncovered.

Recipe name: Eclair Cake
Ingredients:
(1) 8 ounce tub of cool whip
(2) small boxes of vanilla instant pudding
(1) box of graham crackers
(1) tub prepared milk chocolate icing
Method:
Prepare instant pudding as on package. Mix in Cool Whip. Layer graham crackers in bottom of 9X13 inch casserole/baking dish.
Pour one half the pudding mixture over crackers. Place another layer of crackers then remainder of the pudding mixture and top with another layer of crackers.
Heat chocolate icing in microwave for 1 minute. Pour and spread over entire mixture.
Refrigerate. Serves 15

Recipe name: Asian beef and noodles
Ingredients:
3/4 pounds ground beef
1 package Oriental flavor instant Ramen Noodles
1 cup frozen vegetable mixture (partially cooked)
dash of ground ginger
1 tbs. diced green or red or regular onion
Method:
1. Brown ground beef until no longer pink, add onion for a few minutes, remove with slotted spoon and save..discard drippings
2. In same skillet combine 1 cup water, vegetables, and broken up noodles, ginger and seasoning packet.
3. Bring to boil, reduce heat, cover and simmer 3 minutes until noodles are tender, stirring occasionally. Return beef and onions to skillet, heat.

makes 2 servings.....very easy to do..I use frozen mixed vegetables like green/red peppers, snow peas, etc. tastes better the second day

Method:
Fry up the ground beef till done. Remove any excess fat from pan. Pour kindney beans and pecante

Ingredients:
2 ounces Bacon, diced
1 cup Okra, sliced, frozen
1 cup Rice
2 cups Chicken broth
1/8 teaspoon Cayenne pepper
Method:
Brown the bacon in a saucepan. Stir in the okra and rice. Cook for 2 minutes, stirring frequently. Add the broth and cayenne.
Bring to a boil, reduce the heat, cover and simmer for 20 minutes. Serve warm with Louisiana-style hot sauce on the side.

Recipe name: Summertime Delight
Ingredients:
1 whole pound cake, broken into chunks
1 lg or 2 sm pkgs of sugar-free strawberry jello
1 can of pineapple tidbits, drained (15 0z. can)
1 tub low-fat CoolWhip
Method:
Tear the pound cake into chunks, and place in oblong cake pan. Drain the pineapple, and spread evenly over the cake. Mix the jello according to package directions, then pour over the cake, making sure that most of the jello is absorbed by the cake. Chill for at least 4 hours, overnight is best. Before serving, spread CoolWhip over entire cake.
This is always a hit on hot summer days! It is low in calories, but tastes like its very fattening

Recipe name: Dump Cake
Ingredients:
This recipe is really simple and pretty much made like the name states! Just DUMP stuff in! 1 can of pinapple CHUNKS
1 can of cherry pie filling
1 box of YELLOW cake mix
1 stick of butter
Method:
Preheat oven to 350. Spray the bottom of a 13x9 glass pan with nonstick spray. Pour in whole can of pinapple chunks (juice and all)and then pour in whole can of cherry pie filling.
Sprinkle whole box of cake mix on top and even out. DO NOT MIX the cake mix into the filling. Cut whole stick of butter into small pats and place pats evenly on top of cake mix. Throw it in the oven and bake for about 30 minutes or until cake has a golden crust.
Makes a great cobbler-like dessert and is VERY FILLING!

Recipe name: Lousy Cake
Ingredients:
1 pkg yellow cake mix
1 lg can (20 oz) crushed pineapple with it's own juice
1 lg pkg vanilla instant pudding mix
1 lg pkg cream cheese, softened
1 lg container Cool Whip
Optional:
toasted coconut
sliced strawberries
Method:
Make cake in a greased and floured 9x13-inch cake pan (I prefer a glass one). Cook cake according to package instructions. Cool.
Mix crushed pineapple and its juice with the instant pudding mix and the softened cream cheese. Blend with electric mixer for 2 minutes. Let stand for 15 minutes to set up. Spread onto cooled cake. Then, cover entire cake with Cool Whip. Top with toasted coconut or sliced stawberries. Store cake in the refrigerator.
This is great on a hot summer day!

Recipe name: Very Lemony Chicken
Using skinless chicken breasts means this tangy dish is lower in saturated fat and cholesterol.
4 low fat/cholesterol- but good!
Ingredients:
½ lb. Chicken breast, skinned & fat removed
· ½ c. Fresh lemon juice
· tbls. White wine vinegar
· ½ c. Fresh sliced lemon peel
· tsp. Chopped fresh oregano or 1 tsp. Dried oregano
· med. Onion, sliced
· ¼ tsp. Salt
· black pepper to taste
· ½ tsp. Paprika
Method:
1. Place chicken in 13x9x2 glass baking dish. 2. Mix lemon juice, vinegar, lemon peel, oregano & onions. Pour over chicken, cover and marinate in refrigerator several hours or over night turning occasionally. 3. Sprinkle with salt, pepper and paprika. 4. Cover and bake at 300 degrees for 30 minutes. 5. Uncover and bake 30 minutes more or until done.
4 servings: 1 chicken breast with sauce

Ingredients:
1 pkg frozen spinach (defrosted)
1 8 ounce can water chessnuts
1 pkg Knorr Veggie Mix
1 med red onion

mix all the ingredients in a food processor. Cut the pitas in half and fill them with spinach mix.

Recipe name: Curried Chicken Soup
Ingredients:
1-3 T. olive oil
2 c. finely chopped yellow onion
2 carrots, peeled and chopped
2 T curry powder, or more to taste
5 c. chicken stock
1 boneless chicken breast with rib meat, trim skin and fat, cut into chunks
1/2 brown or wild rice
10 oz. frozen peas, defrosted
Method:
Saute carrots, onion and curry powder until carrots are tender. Add stock, chicken and rice. Bring to boil. Reduce heat and simmer for 25-30 minutes.
Add peas and simmer for 15 minutes. Season to taste with salt, pepper, garlic powder, cayenne if desired.
Makes 4-6 portions.

1 unbaked pie deepdish shell
2 eggs
1/2cup all-purpose flour
1/2cup granulated sugar
1/2cup packed brown sugar

Method:
preheat oven to 325
BEAT eggs in large mixer bowl on high speed until foamy. Beat in flour, granulated sugar, and brown sugar. Beat in butter(softened). Stir in morsels and nuts. Spoon into deep dish pie shell
BAKE for 55 to 60minutes or until knife inserted halfway between outside edge and center comes out clean. Cool on wire rack. Serve warm with whipped cream or vanilla ice cream........ makes 8 servings put pie on baking sheet then put in preheated oven

1-lg can creme of mushroom soup
1-bag of tater tots
1-pd of hamburger meat
1-can of mushrooms (optional)
1-sm. onion diced (optional)
1-2 cups grated cheese to your desire
Method:
Fry hamburger and drain add soup and/or optional ingredients. Mix all very well then add tots, Mix slightly to not crush tots.

Ingredients:
2 cups flour
3 eggs
1 teas baking soda
1 3/4 cups sugar
1 teas cinnamon
1 cup cooking oil

Recipe name: Pound Cake~Very Moist
Ingredients:
1 Box Duncan Hines "Yellow Butter Receipe" Cake Mix (no other will work)
4 Eggs
2/3 Cup Oil
1/2 Cup Sugar
1 Cup Sour Cream
1 Teaspoon flavoring
(I like Almond best but you can use Vanilla, Lemon, etc.)
Method:
Mix the above ingredients with mixer until blended.
**You may use 2 loaf pans for this recipe OR 1 bundt cake pan.
Spray the pans very generously with cooking oil (I use my Pampered Chef spritzer with just regular oil) AND sprinkle generously with regular sugar. Pour mixture in pan/pans and sprinkle top with sugar as well. Bake 50-55 minutes @ 325.

EVERYONE WILL LOVE THIS CAKE...STAYS MOIST FOR WEEKS!! You can add some red or green food coloring.

Recipe name: Tomato Florentine Soup
Ingredients:
1 2-28 oz cans Progresso Crushed Tomatoes with added puree (or other low sodium canned tomatoes)
2 tsp. olive oil
1 onion minced
1 lb. frozen spinach, thawed
32 oz water
1/2 Tbsp. Featherweight brand chicken bouillon (low sodium)
Crushed black peopper to taste
Garlic powder to taste
1 tsp Worcestershire sauce
1 dried chipotle, crushed (optional)
(you can substitute 32 oz of chicken stock for the water/bouillon if you aren't concerned about sodium)
Method:
In a large stock pot saute onion in olive oil. Add tomatoes, spinach, broth, and seasonings. Cook, covered, over medium heat for 10 minutes. Serve hot.
Very low fat, very low sodium, full of antioxidants, and tasty!

Ingredients:
1 Pillsbury Crusty French Bread Dough
1-8oz. pkg. Cream Cheese
1 tsp. Dry Italian Salad Dressing Mix
1 Cucumber
2 Roma Tomatoes
*Optional: Italian Seasoning or fresh basil
Method:
Preheat oven to 350. Use cooking spray to coat inside, top and bottom of Flower Bread Tube. Place crusty french bread dough inside of flower tube. Bake for 60 minutes. Cool and slice into 1/4 inch slices. Combine cream cheese and dry dressing mix. Spread on sliced bread. Slice thin, cucumbers and tomatoes and place 1 slice each on top. Garnish with Italian seasoning or fresh chopped basil.

Recipe name: Easy Mexican Lasagna
Ingredients:
1 12-16 oz jar of salsa
4 boneless, skinless chicken breasts
8 corn or flour tortillas
cheddar cheese
Method:
1. Cover the bottom of your crockpot with a thin layer of salsa. Add chicken breasts. Pour the rest of the salsa over the chicken breasts. (Breasts can be frozen or thawed - just adjust cooking time)
2. Cover crockpot and turn on high. Cook for 4-6 hours. Add a couple of hours if you started with frozen breasts.
3. Turn off crockpot and let chicken rest for about 1/2 hour.
4. Using a couple of forks, shred chicken. If mixture is too dry, you may want to add some fresh salsa.
5. Line the bottom of a lasagna dish (13x9) with 4 tortillas. Pour half of the chicken mixture over the tortillas. Top with 4 more corn tortillas. Add the rest of the shredded chicken.
6. Grate your cheese and sprinkle on top of the top layer of chicken.
7. Bake at 350 degrees F for 45 minutes.
This dish is great for potlucks, it reheats well, and tastes good cold, too. It's a very healthy dish - unless you have a heavy hand on the cheese.

Ingredients:
5 carrots chopped
1 large sweet onion
2 cans (14.5 oz) tomatoes
1 large head cabbage chopped
1 (1.5oz) onion soup mix
1 can (14.5oz) green beans
2 qt. tomato juice
2 green peppers(bell, not hot)
6 large stalks celery chopped
1 can(12 oz) beef broth OR
3 boulion cubes
water
Method:
All veggies are chopped. Place veggies in large pot. Add onion soup, tomato juice, beef broth, and enough water to cover veggies. Simmer until tender, about 2 hours. Rinse & dry dried beef before chopping.

12oz. Philadelphia Cream Cheese- softened
2 T. mayo.
1 T. mustard
1 T. dried onion flakes, crushed
1 pkg. Dried beef-chopped fine

Method:
Rinse & dry dried beef before chopping. Mix first 4 ingred. Well. Then add 1/2 of chopped dried beef. Mix well.
I usually shape into ball and then roll in remaining dried beef. I have also just Put into bowl and put the dried beef on top.

Ingredients:
1 stick margarine
1 egg
1 C sugar
1 tsp cinnamon
1 tsp vanilla
1 C oatmeal
1/2 C self rising flour
Method:
Soften margarine in microwave for 45 seconds. Mix in sugar and egg. Add vanilla and cinnamon. Mix in flour and oatmeal. Pour into greased 9x9 pan and bake 25 min at 350 degrees.
This recipe can be doubled and baked in an 11x13 pan

Recipe name:Squash Casserole
Ingredients:
5-6 good sized zuchinni or yellow crook neck squash.
2 Medium fresh tomatoes, or one 15 oz can diced tomatoes.
1 Medium white or sweet onion
2 cups crushed saltine crackers
2-3 Tbsp. butter or margarine
Method:
Peel and dice squash. If using fresh tomatoes, put them in boiling water for about a minute or so, and then peel off the skins, and dice also. If using canned, drain off the liquid.
Peel, and dice onion. Slightly par boil the squash, and drain. Mix squash, tomatoes, and onions with about a Tbsp butter or margarine, and put in a casserole which has been sprayed with PAM.
Crush crackers well, and mix with remaining butter, and a little salt and pepper if you like. Sprinkle cracker mixture over the squash mixture. Bake in oven at 350' for approximately 30-35 minutes.
This is delicious, you can adjust the amount of butter or margarine as you like.

Recipe name:Angel Fluff Fruit Dip
Ingredients:
1 8 oz package cream cheese.
1 Medium jar marshmallow cream.
1-2 Drops red food coloring.
Method:
Put marshmallow cream and cream cheese in bowl, and microwave on high for about 2-3 minutes, or until you can easily blend together. Add the red food coloring. Stir until well blended. Chill for a couple of hours.
Serve with fresh strawberries, sliced peaches, or nectarines.
I never really had a name for this fruit dip before. I think the Angel Fluff sounds good thou

Recipe name:Sesame Asparagus and Carrot Stir Fry
Ingredients:
24 asparagus
6 large carrots
1/4 cup water
1 tablespoon grated fresh ginger
1 tablespoon reduced-sodium soy sauce
1 1/2 teaspoons sesame oil
1 tablespoon toasted sesame seeds
Method:
Cut the asparagus into 1/2 inch thick slices. Cut the carrots into 1/4 inch thick slices. Coat a nonstick wok or large frying pan with non-stick cooking spray and place over high heat. Add the carrots and stir-fry for 4 minutes. Add the asparagus and water and stir and toss to combine.
Cover and cook until the veggies are barely tender, about 2 minutes. Uncover and add the ginger, sesame oil, and sesame seeds. Stir-fry to coat evenly. Can serve with rice
If divided into 6 servings, 65 calories, 2 g fat (Can only be 6 servings if served as a side dish, if this is a main dish it will serve much less)

Recipe name:Baked Breaded Tomatoes
Ingredients:
5 slices whole wheat bread, crumbed
2 tablespoons grated Parmesan Cheese
1 Tablespoon Olive Oil
2 tablespoons chopped, fresh Italian parsley
1 tablespoon chopped, fresh oregano or 1 1/2 teaspoons dried oregano
12 Roma (plum) tomatoes, quartered lengthwise
4 green (spring) onions, thinly sliced, including green portions
1/2 teaspoon ground pepper
1 teaspoon sugar
Method:
Preheat oven to 375F or 190C. Coat glass 8-inch (20-cm) baking dish with nonstick cooking spray. In a bowl- combine crumbs, cheese, olive oil, parsley and oregano. Stir and toss vigorously to coat the crumbs evenly.
In a large nonstick frying pan over medium-high heat, combine the tomatoes, onions, pepper and sugar - saute until the tomatoes soften slightly and extrude some juice, 8-10 minutes
Spread half the tomato mixture over the bottom of the baking dish - then sprinkle half the crumb mixture - spoon the remaining tomato mixture over the crumbs, then sprinkle the remaining crumbs evenly over the top
Bake until the crumb topping is crisp and browned, about 20 minutes. Cool 5 minutes before serving

Recipe name:Spaghetti Squash
Ingredients:
Very low fat. 1 Medium size spaghetti squash. (looks like a honeydew melon)
Method:
Wash well, and dry. Pierce with a knife all the way through in at least 4-5 places. Cook in the microwave on high for about 18 minutes. Let sit for about 20 minutes,then carefully slice in half. (watch out it will be hot inside) Scoop out the seeds, and then scrape out the spaghetti squash in strands , make sure to get it all. Add a little butter and salt and pepper, and enjoy Delicious!!
You can add other seasonings or sauces, but I like it plain, it tastes so good and healthy. My family loves it too. We usually have it with a grilled chicken and rice or whatever sounds good.

Ingredients:
1 CUP MILK
1 CUP SUGAR
1CUP FLOUR(selfrising) or use 1 cup of bisquick/jiffy
1 TSP VANILLA

1 16 OZ. PEACHES, DRAINED
SPRINKLE OF CINNAMON SUGAR (this is optional on top)

mix all ingredients, grease casserole dish, add all but peaches, pour dry ingredients in baking dish then add peaches, sprinkle with cinnamon if desired. 350 oven, 35-40 min.

1 box of instant vanilla pudding
1 cup milk,
chocolate frosting
8oz. cool whip
You can use 2 box pudding (optional)
Method:
mix pudding with one cup of milk, then mix in cool whip.
Layer grahm crackers on bottom, melt the chocolate frosting a bit, enough to pour a bit on crackers, then add pudding mixture, then crackers, frosting pudding.
Keep layering until you end up with chocolate on top. put in fridge for an hour and serve.
Tasty and naughty and the kidddos can make it too.

Recipe name:Potato Soup
Ingredients:
5 pounds potatoes
1 med. onion
8 oz. mushrooms
4 pieces crushed bacon
2 cans cream mushroom soup
2 cans evaporated milk (lite)
cayene powder , salt pepper to taste.
Method:
Cut potatoes in small cubes, par boil, while sauteeing onions, mushrooms, bacon.
When onions are clear, add soups and evaporated milks, mix well.
Bring to boil, add potatoes.
yummy and very filling...... for a tex-mex version, leave out one can of milk and add salsa instead, for nacho potato soup

Ingredients:
Mix well in a large bowl.
1 1/2 cups wholewheat flour (or reg. will do.)
1/2 cup raisins, or choc. chips

4or5 potatoes
1 cup Diced Celery
1 Package-California Frozen Vegetables(cauliflower,carrots,and broccoli)
1 Pound Velvetta Cheese

Ingredients:
1lg. Can sliced peaches (un- drained)
1 6oz. box peach gelatin
1 box yellow cake mix (not pudding kind)
1 stick butter or margarine sliced
1 1/2 cups cold water
Method:
Pour can of peaches and juice into 13 x 9 pan, sprinkle dry gelatin over peaches, sprinkle dry cake mix over peaches and gelatin.
Place slices of butter on top, pour water over top.
Bake at 350 degrees for 1 hour

Recipe name:Strawberry/Rhubarb Crisp
Ingredients:
4 heaping cups rhubarb
2 heaping cups strawberries
2 cups sugar
1 tablespoon flour
1 1/2 cups brown sugar
1 1/2 cups oatmeal
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking power
1 teaspoon salt
2/3 cups butter (melted).
Method:
Mix the rhubarb, strawberries, sugar and 1 tablespoon of flour and pour in a greased 9x13 pan.
Mix the remaining ingredients and spread over the fruit mixture.
Bake at 350 degrees for 45 minutes.

Recipe name:Alaskan Moose Soup
Method:
First you need, of course, moose meat. This can be attained by several methods. (We will stick to the most often used.) Once, you have made sure everyone in the car is OK, check to see what serving size of moose you have to work with. I have found that the grill--meat, (meat remaining on grill) is perfect leftovers for soup. Remaining meat can be frozen for a later entry of winning steak recipes. So beginning with the grill meat, rinse in water and strain - to eliminate any moose hair. This way you will not be accused of having hair in your soup. For broth everyone will rave over, start with glacial ice. Upon retrieving a large enough slab of ice, thaw out by the woodstove while it comes to a boil in a large soup pot. For you nutrition buffs, glaciated ice is preferred for added protein. (i.e.: ice worms)

Having reached a boil, add the following vegetables:
1 Matanuska Valley Zucchini (average length, 3 feet) 1 73 lb. cabbage, State Fair blue ribbon of course. 1 50 lb. bag FREE potatoes (hand picked being left behind at the state farm) 5 Stupid Chickens (Ptarmigan, walk up and grab)

Season the broth to taste with moose droppings, (already processed Alaskan herbs). Add your one tomato from the vine you tried to grow this last summer and has sat in the window for weeks to ripen. For some kitchen humor, add some Alaskan wild mushrooms, and try not to notice when your guests see pink elephants. For a compliment to your soup, earth biscuits are many in Alaska. I personally prefer sourdoughs, myself.
** Many variations to this recipe are available. Replace Moose with Bear, eat with your remaining limbs. Also, Caribou can be substituted, however Salmon is required on Fridays.

Recipe name:Beck's Sugar Cookies
Ingredients:
1/2 Cup Butter (1 Stick) - softened
1 cup Sugar
1 Egg
1/2 Teaspoon Vanilla
1 Teaspoon Baking Powder
1 1/2 cups flour
1/2 Teaspoon Salt
(To make more, just double or triple the recipe)
Method:
In medium bowl with electric mixer,cream butter until soft and fluffy.
With mixer still running,add sugar gradually, beating well with mixer after each addition of sugar.
Add egg and vanilla, and continue mixing until well blended.
Sift or mix together salt, flour and baking powder. Mix into butter - egg mixture.Cover and chill in refrigerator for one hour.(I like to make into a ball of dough)
Grease cookie sheets with butter or pam spray. Preheat oven to 375 degrees.

On a floured counter top or floured pastry cloth, with a floured rolling pin ( and floured hands!), roll out dough until 1/4 to 1/8 inch thick.
Cut out with desired cookie cutter ( I use glass), place on cookie sheets. Bake for 9-10 minutes until lightly browned. Remove from cookie sheets and allow to cool before devouring.

Ingredients:
One box of Vanilla wafers
Two boxes of French vanilla cooked pudding
3-4 bananna's
one can of crushed pineapples
one container of cool whip
chopped walnuts maraschino cherries
Method:
Layer wafers in pan, pour cooked pudding over wafers - let cool
Slice bananna's , drain crushed pineapples and place on top of bananna's
Place cool whip on top, place walnuts on top, place cherries on top, slice it up and serve

Recipe name:Herbed Coated Chicken With Mustard
Ingredients:
In a large bowl mix together:
8-10 pieces chicken
1/2 cup dijon mustard or mayonnaise
2 cloves garlic (crushed)

Coating Mixture - Mix together:
2 cups dried bread crumbs,crushed
1/3 - 1/4 cup Parmesan Cheese
1 tbsp. parsley flakes
1 tbsp. each oregano & basil
pinch rosemary
pinch pepper
red pepper flakes to taste
Method:
After mixing chicken, mustard or mayonnaise together, and mixing coating mixture together.
Take a piece of chicken and roll it into coating mixture and place onto cookie sheet.
Bake at 375 F., for 35 - 45 minutes until juices run clear.
This is a nice change from Shake -N- Bake and much tastier.

Recipe name:Enchilada/Burrito Caserole
Ingredients:
1 pound, ground round or cubed cooked chicken
1 can refried beans
1 cup cheese, your choice
1 15oz. can tomato sauce
1/8 cup sour cream, lite optional upon your taste:
chopped,cooked onions, cook with meat.
black olives, jalepenos, bell pepper
1 pack of 10, flour tortillas
13x9 casserole, or whatever you may have !
Method:
Cook meat with onions, add sourcream,refried beans,mix well.
Cut round tortilla shells into 4 pieces, layer on bottom, then meat, then cheese,
repeat layers until done, end with cheese.
Cook in 350 oven, until cheese is melted.
Hubby & kiddoss loved this quickie recipe, I used an oval casserole, as 13x9 was occupied, any one will work!

Ingredients:
1 Box German choc cake mix
Pkg (14 oz) caramels
3/4 C. Butter
1/2 C. Evap. milk
! C. Choc Chips
1 C.Chopped Nuts (pecan)
1 Can Frosting (opt).
Method:
Mix cake as directed. Pour batter (about 2 cups) into well greased 9"'x13" pan. Bake 15 minutes in a 350* oven. Melt caramels, butter and evaporated milk in double boiler (or micro-on Med).
Pour this over baked cake; spread chips and nuts over the caramel mix.
Pour rest of batter on top. Bake 20 minutes in a 350* oven.
Fudge frosting may be added to the top.

Recipe name:Baileys Cheesecake
Ingredients:
1 ½ cups of coarse biscuit crumbs, 85ml melted butter, 425g ricotta cheese, 225g cream cheese, 4 eggs, lightly beaten, ½ cup of sugar, 240ml Baileys Irish Cream, 1 tsp of vanilla essence, ½ tsp salt.
Method:
Combine crumbs and butter, press over bottom and sides of a greased 22cm tin. Chill.
Beat together ricotta and cream cheese until smooth.
Add remaining ingredients; beat until smooth.
Pour mixture into pan.
Bake for one hour and 15 minutes or until firm in the middle.
Cool for 20 to 30 minutes in tin before removing. Cool completely before serving.

Ingredients:
6 oz. coke, 1/2 cup ketchup(catsup) if u prefer ! meat of your choice, chicken, pork chops. 5-7 pieces .
Method:
Bring 6 oz. of coke to a boil and add meat, cover top of meat with 1/2 of the ketchup.
Cook until almost done, then flip meat over to other side.
Add rest of ketchup, cover while cooking on med low to med. the whole time.
My kiddos prefer this bbq sauce now, to store bought ! cook now till done.....and mix up bbq sauce.tis yummO!

Recipe name:Boiled Fruit Cake
Ingredients:
4oz.margarine, 6oz granulated sugar, 6oz currants. 6oz sultanas, 2oz chopped fruit peel, 1 cup ( 8 liquid oz) water, 1 level teaspoon bicarb of soda, 1 heaped teaspoon mixed spice, 2 beaten eggs, 4oz plain flour, 4oz self-raising flour, pinch of salt.
Method:
Place margarine, sugar, currants, sultanas, peel, water, bicarb and mixed spice in a pan. Bring to boil and simmer for 1 minute. Pour into large mixing bowl. Allow to cool.
Line a 7inch square ( or 8inch round) tin with greased, greaseproof paper.
Add eggs, flours and salt to cooled mixture, mix well, pour into tin.
Bake, centre oven at Gas4, 350 Fahrenheit for 1 and 1/2 hours.

Ingredients:
1 1/2 lbs lean ground beef, 2 cups thinly sliced carrots, 1 cup chopped onion, 1 cup sliced celery, 1/2 cup chopped green sweet pepper, 1 clove garlic, minced, 1- 28 ounce can diced tomatoes, 1- 8 ounce can tomato sauce, 1/2 cup quick-cooking barley, 1 tablespoon instant beef bouillon granules, 2 bay leaves, 1 Tablespoon snipped fresh oregano or 1 teaspoon dried oregano, crushed, 1/4 teaspoon gound black pepper.
Method:
Cook beef, carrots, onion, celery, sweetpepper, and garlic in a large pot until meat is brown and vegetable are tender. Drain well, return to pot.
Stir in 6 cups of water. Add tomatoes, tomato sauce, barley, bouillon granules, bay leaves, snipped or dried oregano, black pepper and 1/4 teaspoon salt. Bring to boil, reduce heat.
Simmer, covered, 20 minutes or until barley is tender. Discard bay leaves.
Garnish with oregano sprigs, if desired..........Serves 8

Ingredients:
3 lb. *lean* beef or pork, 1 can tomatoes (20 oz), 1 medium onion (chopped), 1 tbs. sugar, 1 tbs. butter or margarine, 1 tsp salt, 1/4 tsp. pepper, 1/2 cup vinegar, 3/4 cup ketchup, 1/2 cup worcestershire sauce.
Method:
Mix all ingredients in large heavy saucepan. No need to brown meat first. (trust me on that one).
Cook slowly over low heat for about 1 hour. Then simmer gently until meat shreds easily.
When cool, shred meat, and simmer again for a few minutes.

Recipe name:Quick Chicken Egg Drop Soup
Ingredients:
2 Cups water, 3 chicken bouillon cubes, 1 egg beaten.
Method:
Add chicken bouillon cubes to water in a pan. Boil!
When cubes are completely dissolved, pour in egg. Stir so egg does not cook in one big clump.
This really worked for me when I had trouble eating anything following chemo!

1/2 pounds of Velveeta Cheese,1 cup margarine (2 sticks), 1tsp. vanilla,1/2 cup cocoa,2 lb.bag confectioner sugar, Chopped nuts optional.
Method:
Sift together confectioner sugar and cocoa while melting cheese and margarine.
When melted add vanilla mix well..... then add the sifted sugar and cocoa. Mix till well blended.
Pour into 13X9 greased casserole glass dish, spread evenly, chill for 15 min, cut and EAT.
This is only for special occasions, like on good onco checkups!!!!!!!!!!!!! or Christmas !

Ingredients:
Lg. tub of cool whip, small jar maraschino cherries-cut up, Lg. can crushed pineapple and juice, small box pistachio instant pudding - use it dry, 2 cups mini marshmallows, chopped nuts (optional) .
Method:
Dump all ingredients in bowl and mix together well.
Sprinkle nuts on top if you like. Will fill 9 by 13 cake pan or glass baking dish nicely. Can be made in smaller quantities by using smaller cool whip, pineapple, marsmallows and such.
Can't be messed up and can be frozen to serve later when unthawed.
Great for picnics, baby or bridal showers or dessert at home.

Ingredients:
4 to 6 whole Chicken breast, boned and halved. 1 can cream of celery soup, 1 can cream of mushoom soup, grated parmesan cheese, lemon juice, salt and Pepper, paprika, celery salt.
Method:
Rinse chicken breast and pat dry. Season with lemon juice, salt, pepper, celery salt and paprika.Place in Slow Cooker.
In medium bowl or pan, mix mushroom and celery soups. Pour over chicken breast.
Sprinkle with Parmesan cheese. Cover and cook on low setting for 8-10 hours. Serve chicken and sauce with hot fluffy rice.

Recipe name:Mexican 7 Layer Dip
Ingredients:
1-15 oz can of refried beans, 1 pint sour cream, 1 cup of quacamole, 1 small can chopped chili peppers, drained. 1-15 oz. can drained and chopped black olives, 3-4 large tomatoes chopped, 1 lb. shredded colby or Monterray Jack Cheese.
Method:
Start with a LARGE platter and mound the beans in the middle. Just like icing a cake cover beans with sour cream. Third layer is quacamole(2 large avocados mashed with salt, dash of lime juice)continue "icing" the mound. 4th layer is chopped chili peppers, cover them with chopped olives.The last 2 layers you have to press the items in to cover the mound. Next comes the tomatoes and last the shredded cheese. Sprinkle with chili powder and make a small depression in the top--fill with salsa. Serve with tons of tortilla chips.
Big favorite at our house.

Ingredients:
4 boneless, skinless chicken breasts, 2 cloves garlic minced, Italian flavored bread crumbs, 1 tsp. oregano, lite olive oil, 1/4 C. lemon juice, 1 C. water.
Method:
Pound breasts (hehe) between 2 sheets of plastic wrap till they are 1/4 inch thick. Arrange in ovenproof baking dish. Sprinkle garlic over chicken.
Sprinkle bread crumbs to cover breasts. Sprinkle about 1 tsp. oregano over breasts. Cover chicken with lite olive oil. Bake in 375 degree oven for 1/2 hour.
Combine lemon juice and water and pour over top of chicken. Bake another 1/2 hour. Serve with pasta..extra sauce in baking dish can be put on top of pasta.
